Zucchini + Potato Veggie Fritters (Gluten, Dairy, and Nut-Free)

It’s funny when I look back at some older recipes on this blog because I read my words about what was going on at the time that blog post was published, and then I am immediately flooded with memories from that era. Well, the time I am currently living in is the height of quarantining and social distancing for the sake of Covid-19. In the past 30-ish days or so, we have cooked every single meal (except 1) at home— which is truly a world record of sorts for any New Yorker. Right now is a time in which I’ve been playing Macgyver with the contents of our fridge + pantry most days, strategically using produce by the order in which they expire so that we don’t waste anything.

Collagen Fat Balls Two Ways: Cinnamon Pecan Chia + Sesame Tahini Walnut

So fat balls are all the rage lately. They are definitely an awesome way to pack in the nutrients with multiple sources of superfoods in a delicious bite-sized snack. So, I made these for my mom for that exact reason!

I wasn't sure which flavors she would like, so I came up with two varieties. Thankfully, she loved both! The Cinnamon Pecan Chia with Maca smelled like a cinnamon bun and tasted like snickerdoodle cookie dough, then the Sesame Tahini Walnut tasted like halva + cookie dough simultaneously! The method to make them is the same, but I've included both variations below.

Recently, it's been a period of self-reflection in my life. Thinking about my purpose, who I have become, what I can become more of and less of, and what is of priority to me in my life.

Family is something that has always been of utmost importance to me. This article I read a few weeks ago gave me a rattling perspective of how precious this remaining time with my family in my life I have, so I've been thinking about it a lot lately. While I...

Matcha Peppermint Bark

How would you like to receive a tin of this gorgeously festive matcha peppermint bark for the holidays?

Edible gifts are my favorite kind to make and give. There's something about the process of creating and making something for someone that gives a present a special, personalized touch. Growing up, my family never had any "signature" holiday treats. For a lot of my friends, they'll talk about...

By the way, who else is in disbelief that it's already November? The Strawberry-Rhubarb Jam Crisp was perfect for summer- bursting with tart berry flavor and sweetness. But this persimmon crisp is everything fall flavors should be: warming, toasty, and a kick of spice...

Chocolate Peanut-Butter Coconut Granola

This chocolate peanut-butter coconut granola is gluten-free and vegan, and you can easily substitute or add in customized ingredients of whatever you have on hand to make your own version of it. The chocolate peanut-butter is a classic combination, but I threw in some coconut chips, flaxseeds, and pepitas to bump up the healthy fats and give it more of a crunch. Lately, I have also been loving quinoa in my granola, to add some healthy nutrients and a deliciously nutty crunch to it.
