Truly, I am a blender pancake queen— it’s almost laughable how many recipes I have on here for easy blender pancakes. But this breakfast food is just too easy to make accommodating to dietary restrictions and incorporating flavors of the season!

I’ve been craving all the fall harvest-y flavors and scents, so I knew I wanted to make something with the warming spice of cinnamon and sweet apples (I can only have pasteurized applesauce, as I’m allergic to fresh apples!). I had thrown some tahini in my pancakes before, and it helped add not only a deliciously nutty flavor, it helped the texture of the pancakes become even crisper at the edges yet pillowy soft on the inside— just the way I like them! These are naturally gluten-free (based in oat flour), dairy-free, vegan optional, and nut-free.

Apple-Cinnamon Tahini Oat Pancakes (Gluten-free, Vegan)

*serves 2 people (makes about 8-10 4” pancakes)

Ingredients

3/4 cup Oat Flour
1 cup no-sugar added Applesauce
3 tbsp pure Tahini
1 large Egg OR flax egg if vegan (1 tbsp ground flax + 3 tbsp water, refrigerate for 15 min.)
1 tsp vanilla extract
1 tsp ground cinnamon
1 tbsp baking powder
Pinch of salt

Optional: Tahini Maple Syrup to top: combine equal parts tahini + maple syrup

Recipe

1. Place all ingredients into a blender, and blend until smooth and consistent. 

2. Heat a large non-stick pan over medium-low heat, and lightly grease pan with a dab of coconut oil. Make sure pan is fully heated, then pour a loaded spoonful of batter onto the griddle to make each pancake (should be about 3-4" in diameter). Let pancakes cook for about 2 minutes until the usual pancake sign of bubbles popping up happen (the batter is thicker so it may take a bit longer!) and bottom is golden, then flip and cook for another 1-2 minutes on the other side. 

*tip: these pancakes cook quicker on the outside than the inside, so to avoid undercooked batter on the inside, take it easy on the heat and be patient with the time it takes to cook each side. Cranking up the heat wont make it go any faster!
 

3. Serve when finished! Drizzle with tahini maple syrup to top, and any toppings you desire (sesame seeds and chia seeds are pictured)
