Golden Fuel Crepes with Simple Mills

Can I be honest for a second here? Since launching, I had really wanted to make Golden Crepes with Live 24k's Golden Fuel (a turmeric + collagen blend) because my Matcha Oat Crepes recipe is one of my most pinned recipes on Pinterest; but the day I was trying to make them, I was having a really off day in the kitchen and the crepes were turning into a crumbly mess of too thick or too thin and brittle golden failures.

So I got a little scared off of them. But when I teamed up with Simple Mills (an amazing food company that shares Live 24k's values of food without fillers) to bring you guys an easy but 💣.com healthy recipe, I was dying to try their most popular Pancake & Waffle baking mix to give these gluten-free, dairy-free Golden Fuel Crepes a go again.

I love that this mix has only 8 ingredients in it (Almond Flour, Arrowroot, Organic Coconut Sugar, Organic Coconut Flour, Cream of Tartar, Baking Soda, Sea Salt) and no gums, gluten, soy, or dairy. All you need are eggs, milk (or water), and oil to create the batter! Also, the arrowroot in this mix is the magic maker for these crepes-- they hold them together beautifully so it doesn't crumble, but it also allows the crepes to be nice and flexible to be foldable.

Then, I created Golden Fuel with the intention of being super versatile so you can get the benefits of turmeric and collagen by adding it to the foods you already eat, rather than having to think about fitting in another new healthy food item to your daily regimen. It's also free of sugars and gums, so that if you are adding it to something that is already sweetened, it doesn't add any unnecessary sugar.

And I gotta say guys, combining Golden Fuel and this Simple Mills pancake mix for these Golden Fuel crepes is now going to be at the very top of my list when I need to make a breakfast for friends or guests-- it is ridiculously easy, very allergen friendly for most dietary needs, it makes you look like a fancy lil' master chef, and it is INSANELY delicious. Like, after I finished shooting these, I straight up picked these up with my hands (honey drizzle and all) and ate them in 5 minutes. Maybe less. Definitely less.

You can also get creative with whatever fruits, seeds, nuts, or toppings you want to fold into the crepes or drizzle on top. I put banana coins and slice strawberries inside the crepes, then drizzled these crepes here with a touch of local honey and sprinkled some coconut shreds on top!

Live 24k Golden Fuel Crepes with Simple Mills

Gluten-free, Dairy-free, Soy-free
Serves 2 (makes about 8 small crepes about 6" in diameter)

Ingredients

1.5 Cups Simple Mills Pancake & Waffle Baking Mix
2 tbsp Live 24k Golden Fuel Turmeric + Collagen Blend
3 large Eggs
1/4 cup + 3 tbsp any type of Milk (I used coconut)
2 tbsp of Oil (I've used avocado oil or coconut oil [make sure it's melted])

Recipe

1. In a large mixing bowl, whisk together baking mix and Golden Fuel. Add wet ingredients and whisk until well combined. Set aside.

2. Heat a griddle or non-stick pan over medium-low heat, and grease pan with a touch of oil.

3. Pour about 1/4 cup of batter onto griddle. Using a flat spatula (or crepe spreader if you have one), gently spread batter as wide as possible to create a thin layer of batter (about 6" in diameter). As it cooks, continue to spread batter so it is evenly distributed. After about 15 seconds or when the batter is solid, use spatula to flip crepe over. Cook for about 15 more seconds, then remove from heat and set aside on a plate. Repeat until all batter is used.

4. Assemble crepes in whatever fashion you wish, folding fruits and/or nuts and seeds into layers. Plate, and serve!
