5 Healthy Fall Squash Recipes

Happy Monday, everyone!

We had a gooooorgeous fall weekend with sunny weather in the low 70's with an amazing breeze. If only NYC was like this year-round!

The farmer's market is full of fall goodies now, lots of kale, apples, dahlias, and of course, an abundance of winter squash and gourds.

I had a fun fall breakfast recipe coming for this morning, but last Friday my computer decided to completely go beserk any time I tried to launch anything photo-related. So, rolling with the punches, I decided to share five of my favorite fall squash recipes.

Fall/Winter squashes are some of the healthiest, easiest, and also most filling ways to boost up your veggie rotation to add some variety to your dinners. 1. Roasted Delicata Squash

Delicata squash is one of my favorite roasted veggies during these cooler months. They clock in at only 40 calories per cup but they feel just as hearty and filling as potatoes do to me. Really awesome one I recommend to training clients! Plus, you can eat the skin of this squash, so prep and cooking is ridiculously easy.

2. Autumn Butternut Squash Soup

I have been craving this soup like crazy! I picked up a little butternut at the market and I'm planning on making a batch of soup this week. I also freeze portions of it for an easy weeknight dinner when I'm not starving but need something healthy and hearty. 

3. Pumpkin Olive Oil Banana Bread

I have to say, I always get miffed at spending $4-6 for a slice of bread at a coffeeshop. This amazing pumpkin olive oil banana bread looks all fancy but it's straightforward to make and not uber-dense. It's gluten-free and vegan, but you can also use regular flour and eggs in there too! This also freezes well, and it's like finding change in your pocket when you realize you have a slice of this tucked away in the freezer when that hanger comes on.

4. Butternut Squash Carbonara w/Sage-Maple Bacon

Holy cannoli, if you love creamy pasta sauces, this is totally up your alley. Sounds all fancy and also super caloric, but it's amazingly healthy for being all foodie gourmet. 5. Roasted Brown Butter Sage Butternut Squash

Okay, so not only do you get a recipe in that post, but I teach you how to break down a butternut squash without chopping a finger off. But seriously, try roasting the butternut squash cubes in a sage brown-butter-- it will change your world! Perfect veggie to throw in a buddha bowl or as a shared side dish for dinner.
